Eds 2169 upgrade to junit5 and mockito3

Thomas Staunton requested to merge EDS-2169-upgrade-to-junit5-and-mockito3 into develop

Upgraded the Gradle imports of Junit and Mockito and fixed the Unit tests to work with the new changes and also updated Spring.
