Adding logging to the controller

Unfortunately, this will add a load of noise to the logs when someone works with the uploader but hopefully, this will help work out where the errors might be occurring as currently there are no error logs

I have added the date to them because the other logs don't print the date, just the time. These logs are only temporary so I don't see a need to change the other logs.
